Description

DISTINCTIVE QUALITIES: Cochinillo asado, or roast suckling pig, is a Spanish delicacy that originated in Segovia, Spain. The delicate pork is so tender that it actually falls gently off the bone when cooked. This roasted suckling pig is served whole and is sure to impress guests at any dinner party. 

Cochinillo is uniquely tender due to the young age of the pig. Much like , the succulence is directly related to the age of the animal. Our imported suckling pigs are authentically sourced from Segovia, Spain. 

All of our suckling pigs are raised on a diet exclusively of milk. Cochinillo asado is surprisingly easy to prepare. Roasted in a special earthenware dish, the meat is so succulent that, in an effort to showcase its tenderness, chefs use the edge of a dinner plate instead of a knife, to cut and serve the pig.

Where is your Suckling Pig sourced from? 

Our pigs are sourced directly from Segovia, Spain, the undisputed birthplace of Cochinillo Asado. This ensures you’re experiencing the dish in its purest form, steeped in centuries of culinary tradition. Each bite carries the whisper of cobbled streets and ancient ovens, transporting you to the heart of Spain.

How is Cochinillo so tender?

Kolikof’s Cochinillo Asado is the definition of melt-in-your-mouth. Aged under three weeks and cooked under low-heat for hours, the meat practically falls off the bone with the gentlest touch. Each bite is a symphony of delicate flavors, a testament to the animal’s pure, milk-fed diet.

SERVING SUGGESTIONS: The technique for roasting a suckling pig is similar to roasting any other kind of meat. Oven-roast slowly, in an earthenware dish and serve hot with a well-browned and crusty skin.

QUANTITY:

Domestic: 1 – 7/8 lb. suckling pig. Serves approx. 4-6 people.

Imported: 1 – 100% Ibérico suckling pig.

COUNTRY OF ORIGIN: Choose from Spain (Segovia), or USA.

Kolikof’s Cochinillo Asado is extremely authentic and some of the highest quality you can find on the market. Our pigs are fed exclusively on an eggcorn diet, which leads to tender cuts of meat that come right off of the bone. Our pork skin is also carefully roasted to perfection and has a distinctive crunch due to extra crispy skin.
